Guacamole is one of the best things in life. We lived in San Diego for a few years in the early 1980´s and like many San Diegan we were "blessed"with an abundance of more sumptuous Avocado than we could eat.

Even our toy poodle "JJ" was a Avocado salsa fanatic. He would stand straight up on his hind legs and simply devour any of the ripe avocados within his grasp.

What a shinny coat he had!

Here is a delicious guacamole recipe.

Your family and friends will absolutely be begging for more of this melt in your mouth avocados salsa dip. Then you can send home a sack full of your surplus avocados with them!

It is really easy to make this mashed avocado recipe simply using a fork or a potato masher. However, this classic guacamole salsa recipe is a fabulous homemade guacamole pleasure when made and served in a molcajete.




3 fresh Jalapeños or Serrano chilies, stems and seeds removed and finely chopped

2 large ripe avocados, pitted, peeled and mashed

½ finely chopped onion

1 small red ripe tomato, chopped

1 clove garlic, mashed or finely chopped

- juice of 1 lime

to taste

Molcajete Directions:

Molcajete Place the smallest ingredients in the molcajete first. Pound and grind the garlic and chilies to your desired texture.

Add the chopped onion, tomato and avocado. Pound and grind a little more to your desired texture. Season to taste with the lime juice and salt.

Place the Avocado pit back into the salsa, cover the surface with a plastic wrap and let the guacamole season for about 30 minutes, this allows the flavors to blend.

Serve straight from the molcajete by removing the plastic wrap and the avocado pit.

Serve with chips and raw vegetable for dipping or use as a garnish or topping for tacos and enchiladas.

Don't worry you can make this wonderful dip in a food processor.

Place the Chilies, garlic and onion and chop finely using a few pulses.Add the tomato and avocado then process using short pulses to desire texture.Remove to serving dish and season with the lime juice and salt to taste.

Allow to rest for 30 minutes by placing the avocado pit in the guacamole and cover with plastic wrap directly on the surface. Remove the plastic and the avocado pit and Enjoy!
