Tomatillo Avocado Salsa

Tomatillo and Avocado two of my all time favorite homemade salsa recipe ingredients.

Look for tomatillos in the produce section of your local grocery. Pick tomatillos that are firm and bright green as the green color and tart flavor will add to any dish.

Fresh ripe tomatillos will keep in the refrigerator for about two weeks. They will keep even longer if the husks are removed and the fruits are placed in sealed plastic bags stored in the refrigerator.

Avocados are a fruit, not a vegetable and ar a very healthy food with 60 percent more potassium than bananas. Not to mention they are sodium and cholestrol free.

Avocado makes scrumptious guacamole so just wait till you taste the terrific combination of Tomatillo and Avocado together.

Did you know San Diego County is the Avocado Capital of the U.S., producing 60% of all the avocados grown in California.

To ripen an avocado, place the fruit in a plain brown paper bag and store at room temperature until ready to eat (usually two to five days).

Tomatillo Avocado Salsa

  • 1 pound tomatillos, roughly chopped

  • 3 serrano chiles, with seeds

  • 3/4 cup fresh cilantro leaves

  • 2 tablespoon.

  • Fresh lime juice

  • 1 avocado roughly chopped

  • 1 teaspoon Salt or to taste.

Wash the tomatillos and remove the papery outer skin. Simply wash under cold running water and they will come right off.

To peel the avocado. Start with a ripe avocado and cut it lengthwise around the seed. Rotate the halves to separate.

Remove the seed by sliding the tip of a spoon gently underneath and lifting out. The other common seed-extraction method - striking the seed with a knife - is dangerous and not recommended.

Peel the fruit by placing the cut side down and removing the skin with a knife or your fingers, starting at the small end. Or simply scoop out the avocado meat with a spoon.

Place all ingredients in a food processor or blender, and puree to your desired consistency.

Makes About 2 cups
