These aromatic spectacular platters of sizzling fajitas, presented with an avalanche of sour cream, guacamole, sizzling onions, cheddar and jack cheeses, red and green peppers, pico de gallo, tortillas and rice can also be made with char grilled chicken, beef or both.
Pacifico Cerveza anyone?
1/2 cup red wine vinegar
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon oregano, crushed
1/2 teaspoon each salt and pepper
2 cloves garlic, minced
1 1/2 pounds flank steak
In a small bowl, combine all ingredients except steak; stir well.
Score steak slightly on each side
Place in FoodSaver.com Canister with marinade.
Marinate 20 minutes.
Drain, reserving marinade.
Grill or broil steak on each side until cooked as desired, basting occasionally with marinade.
Discard any remaining marinade.
Slice steak across the grain.
Serve with warmed tortillas, grilled and sliced bell peppers and onions and your choice of sour cream, guacamole and fresh homemade salsa.
Makes 8 servings.
