the only salsa recipes you will ever need is Margaret´s".

Margaret´s Picante Sauce

  • 1 ½ Gallons Fresh Ripe Tomatoes (peel tomatoes by putting in boiling water for 15 seconds and then in ice water) hand chop and if tomatoes are watery - let set for a few minutes and drain off excess juice. This will make your sauce chunky!

Using a food processor chop the next 3 ingredients.avocados  

  • 3 large onions

  • 8 bell peppers

  • 1 quart jalapeños

Measure the following:  

  • 1 Tablespoon Garlic Powder

  • 4 Tablespoon Salt

  • 1 Tablespoon Pepper

  • 1 Tablespoon crushed Red Pepper

  • 2 Tablespoon Sugar

  • 1 Tablespoon Salad Oil

  • ½ cup Vinegar

  • 1 Tablespoon Cumin

  • 1 teaspoon Paprika

  • 1 teaspoon Chili Powder

Put all ingredients in large pot - bring to rolling boil - turn down heat - Cook 20 minutes.

Put in sterile jars and seal.

Makes approximately 17 pints.

Just got this from a loyal reader.

I am in Canada and trying to do this recipe properly. I can't buy the tomatos in the measurement offered, so I was hoping you could tell me how much to use. She calls for 1 ½ Gallons Fresh Ripe Tomatoes can you tell me what that is in NUmber of tomatos or even in cups? I have no idea what a gallon of tomatoes looks like. Thanks so much, Renee

Sure Renee, sorry for the confusion!

How about we start with one cup of chopped tomatoes.
Depending on the size of your tomatoes for example 1 really large tomato could easily yield 1 cup of chopped tomato or it might take 2 -3 Roma tomatoes to equal 1 cup.

Now that you have 1 cup of chopped tomato. Here is the conversion:

2 cups = 1 pint
2 pints = 1 quart
4 quarts = 1 gallon
6 quarts = 1 1/2 gallons

Keep in mind that Margaret's Picante Sauce recipe will make approximately 17 pints of salsa.

Since I am not familiar with how your supply of fresh tomatoes in Canada would be this time of the year. You might consider using your favorite brand of "canned" diced tomatoes in this recipe, instead.

Just be sure to drain the juice from the diced tomatoes and use the equivalent amount called for in the recipe. I have been very pleased with the results.
