Quick Easy Salsa to the rescue. "Company is Coming Salsa"
Company is coming down the dead end road and I need to make some great tasting salsa fast.
What do I do?
Use this favorite quick easy salsa recipe “Company is Coming Salsa” recipe.
I guess it’s really not all that fast but you will drive you guest crazy with the aroma of the roasting tomatoes. Just imagine the anticipation of your great tasting homemade salsa.
- 3 lb ripe, red tomatoes, washed and halved
- 3 to 6 jalapeno peppers, cut in halve length wise, remove the seed and stem
- 4 cloves garlic, mince through a garlic press
- 1/2 cup white onion, finely chopped
- 2 tablespoons New Mexican pure ground chili powder
- 1/4 tsp. ground cumin
- 1/4 cup cider vinegar
- Salt to taste
Roast tomato halves in a single layer a large baking pan at 400 degrees for 20 minutes. Cool. Drain and discard any clear juices in bottom of the pan.
You will need to do this in two batches, place cooled tomato halves and about half of the jalapeno in food processor or blender and roughly puree being careful to not over process.
Add pieces of jalapeno while processing second batch, pulsing on and off.
Place tomato-pepper puree in a wide, 4-quart saucepan with garlic, onions, chili powder, cumin and vinegar.
Simmer 10 minutes, then taste.
Add more seasonings and salt, if desired.
Serve warm ‘cause your friends are really starving by now!
You can refrigerate any left over “quick easy salsa recipe” for 7 to 10 days. This salsa will even freeze well.
